The Holiday Drink – How to Make It

We present a home-style version of a drink from the seasonal drinks list. This is a large-volume prepared mix that's bursting with the flavours associated with Christmas time, making it ideal for a holiday party. Save the extra syrup you can use for breakfast cocktails, puddings, or for additional servings of bikinis.

Bikini Recipe

Makes enough for 10 guests

Ingredients for the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Combine the listed components inside a pot, bring to a simmer, mixing until the sugar dissolves. Next, turn off the stove and leave to cool completely. Pour to a sealable bottle, close it keeping it chilled, where it will keep for up to one month.

Preparing the Batch Mix: Combine all the liquids into a sizeable container, allow it to infuse for an hour, then pass it through , ideally through muslin, making it completely strained.

For serving: Add 85ml of your premix to a stirring glass packed with ice, and agitate gently for a minute to chill. Filter into a cold coupe glass or equivalent, garnish with the cranberries adding the final touch by giving it a light spray of mandarin oil above the glass.
